Abstract
The obtained results allow to make it appropriate determination of concentrations of free amino acids and their derivatives in the milk, as well as evaluating the amino acid spectra using multivariate statistical analysis and mathematical modeling as selective methods for assessing the quality of milk and its rigging.
Results of the study are recommended for use in the dairy industry of the Republic of Belarus.
